GUIDELINES FOR THE MANAGEMENT OF ALLERGENS AND GLUTEN IN THE FOOD INDUSTRY

The ACSA (Catalan Food Safety Agency), the Catalan Celiac Association and the Association of Industrial and Food and Beverage in Catalonia (AIABECA) and companies in the food sector have developed a guide to help establishments incorporate the management of food allergens in their self-management plan, assess the risks of cross contamination of a product with an allergenic food or food ingredient and ensure the accuracy of the information provided on the label.
